My favorite salad
This is a simple and yummy salad that I make every 2 days or so. Am a total salad person and love the crunch of fresh vegetables with every meal I have. More often than not, I go for plain lemon juice, salt and pepper over the veggies. But when I have the time, I try out different home-made salad dressings. And this is one of my favorites.
Ingredients:
Carrot – 1 large
Cucumber – 1
Red & yellow Bell peppers – ½ cup
Olives – 10 (I use bottled green olives stuffed with pimento)
For the dressing:
Mustard paste (I use Fun Foods Mustard Sauce) – 1 tbsp
Balsamic Vinegar - ½ tsp
Juice of half a lemon
Olive Oil – 1 tbsp
Salt – to taste
Put all the ingredients for the dressing into a small container, put on the lid and give it a good shake. Take a large salad bowl filled with vegetables of your choice, pour in the dressing, and mix well. Garnish with toasted sesame seeds and olives.
